Lobster with Green Peas and Hollandaise Sauce

- 1 cup (150 g) frozen green peas, thawed
- 2 cups (50 g) arugula
- 2 green onions, thinly sliced
- 2 tbsp small tarragon leaves
- 1 tbsp (15 ml) vegetable oil
- 2 tsp (10 ml) lemon juice
- 2 tbsp (30 ml) lemon juice
- 2 tbsp (30 ml) water
- 3 egg yolks
- 1 cup (225 g) unsalted butter, melted and cooled
- 4 eggs
- 2 lobsters, 1 ½ lb (675 g) each, cooked and shelled
