Ингредиенты

  • 1 cup (150 g) frozen green peas, thawed
  • 2 cups (50 g) arugula
  • 2 green onions, thinly sliced
  • 2 tbsp small tarragon leaves
  • 1 tbsp (15 ml) vegetable oil
  • 2 tsp (10 ml) lemon juice
  • 2 tbsp (30 ml) lemon juice
  • 2 tbsp (30 ml) water
  • 3 egg yolks 

  • 1 cup (225 g) unsalted butter, melted and cooled
  • 4 eggs
  • 2 lobsters, 1 ½ lb (675 g) each, cooked and shelled

  1. In a bowl, combine the peas, arugula, green onions and tarragon. Season with salt and pepper. Set aside at room temperature.
