Lime and Chipotle Pepper Butter (for corn on the cob)

- 3/4 cup (180 ml) butter, softened
- 1 lime, zest finely grated
- 1 tbsp (15 ml) lime juice
- 1 tbsp (15 ml) canned chipotle pepper in adobo sauce, drained, seeded and finely chopped (with 1 tbsp / 15 ml adobo sauce)

- In a bowl, combine the butter, lime zest and juice, chipotle pepper, and reserved adobo sauce. Season with pepper.
- Spread over warm corn on the cob.
