Ингредиенты

  • 1 1/2 cups (375 ml) green lentils
  • 5 cups (1.25 litres) cold water
  • 1 cup (250 ml) diced zucchini
  • 1 cup (250 ml) red bell pepper, diced
  • 1 green onion, thinly sliced
  • 60 g sliced smoked and dried duck breast, chopped
  • 3 tablespoons (45 ml) olive oil
  • 4 teaspoons (20 ml) red wine vinegar
  • 2 teaspoons (10 ml) chopped parsley
  • 1 teaspoon (5 ml) fresh thyme leaves
  • Salt and pepper

  1. Rinse the lentils under cold running water. In a saucepan, bring the water to a boil with the lentils. Simmer over medium heat for 30 to 35 minutes or until the lentils are tender. Drain and let cool in a large bowl.
  2. Add the remaining ingredients. Season with salt and pepper. Toss to combine. Serve or cover and refrigerate overnight.
