Meet this cocktail that’s full of freshness and delicacy, wonderfully combining the lightness of sake with the aroma of elderflower liqueur. A few drops of the latter are enough to make this cocktail deliciously fruity. With the addition of lime juice and zest, the perfect balance is achieved.

- 1 long lime zest, removed with a vegetable peeler
- 1 ½ oz (45 ml) sake
- 1 ½ oz (45 ml) elderflower liqueur (St-Germain)
- ½ lime, zest finely grated
- ½ oz (15 ml) lime juice
- ½ cup (125 ml) ice cubes

- On a work surface, using a small knife, remove the white pith from the lime zest. Cut the zest into a long rectangle. Cut the two short sides of the rectangle on an angle. Make an incision lengthwise down the centre of the zest. Curl the zest around itself.
- In a cocktail shaker, vigorously mix the sake, elderflower liqueur, grated lime zest, lime juice and ice cubes. Strain through a small sieve over a cold Champagne coupe. Rub the rim of the glass with the curled lime zest, then hang the zest on the rim of the glass to decorate.
