On a work surface, using a small knife, remove the white pith from the lime zest. Cut the zest into a long rectangle. Cut the two short sides of the rectangle on an angle. Make an incision lengthwise down the centre of the zest. Curl the zest around itself.

In a cocktail shaker, vigorously mix the sake, elderflower liqueur, grated lime zest, lime juice and ice cubes. Strain through a small sieve over a cold Champagne coupe. Rub the rim of the glass with the curled lime zest, then hang the zest on the rim of the glass to decorate.
