    With the rack in the middle position, preheat the oven to 190 °C (375 °F).

    In a small saucepan, bring the honey to a boil with the lemon and ginger. Let steep for 10 minutes. Add the peaches and coat thoroughly.

    Place the peaches, lemon slices and ginger on a baking sheet. Drizzle with the honey and bake for about 20 minutes or until the peaches are tender.

    Serve with vanilla ice cream and biscotti pieces.
