Hearty Vegetable and Apricot Couscous

In a pot over medium-high heat, heat the oil and the spices. Add the broth, harissa, carrot, onion, chickpeas and dried apricots. Season with salt and pepper. Bring to a boil. Cover and simmer for 5 minutes. Remove from the heat.

Add the couscous and stir to combine. Cover and let rest for 5 minutes. Fluff the couscous with a fork. Adjust the seasoning. Divide the couscous among 4 plates. Sprinkle with the green onion. Serve with grilled merguez sausages, if desired.
