  • 4 cups (600 g) sweet potatoes, peeled and diced
  • 3 tbsp (45 ml) canola oil

  1. In a large non-stick skillet over medium-high heat, cook the potatoes in the oil for 20 minutes, stirring occasionally, until the potatoes are cooked through and nicely browned. Season with salt and pepper.
  2. Serve with (miso and maple ribs), grilled fish or roast chicken, if desired.
