Ham and Broccoli Omelette

Instructions

    In a bowl, combine the eggs and green onion. Season with salt and pepper.

    In an 8-inch (20 cm) non-stick skillet over medium heat, melt the butter. Pour the egg mixture into the skillet. Cook for 1 to 2 minutes, breaking up the eggs with a spatula to ensure even cooking.

    Once the edges are almost cooked and the centre is still slightly runny (see note), place the ham, cheddar and broccoli at the centre of the omelette. Fold the edges of the omelette over the filling. Continue to cook, if desired.

    Slide or flip the omelette onto a plate. Cut in half and serve with toast, if desired.
