  • 2 tablespoons (30 ml) olive oil
  • 1/2 cup (125 ml) dry white wine
  • 2 tablespoons (30 ml) white wine vinegar
  • 1 shallot, finely chopped
  • 1/2 teaspoon (2.5 ml) black pepper, crushed
  • 1/4 teaspoon (1 ml) salt
  • 1 1/2 cup (375 ml) very cold unsalted butter, cubed
  • 1/2 cup (125 ml) sorrel, chopped
