Ingredients

1 whole chicken, about 5 lbs (2.5 kg)
1 tablespoon (15 ml) maple syrup
Salt and pepper
1/2 cup (125 ml) coarse salt
1/2 cup (125 ml) sugar
1 cup (250 ml) maple syrup
2 tablespoons (30 ml) Dijon mustard
3 cloves garlic, finely chopped  
2 tablespoons (30 ml) fresh ginger, chopped
8 cups (2 litres) water, approximately
