This grilled citrus chicken is easy to make and requires little prep time. Let the chicken marinate in a mixture of garlic, citrus juice, spices and honey, and then grill. Serve the meat with a salad for a tasty and refreshing weeknight meal.

- 12 boneless, skinless chicken thighs (about 2 lb/900g)
- 2 garlic cloves, chopped
- 1 orange, juiced
- 1 lime, juiced
- 3 tbsp (45 ml) vegetable oil
- 1 tbsp (15 ml) honey
- 1 1/2 tsp ground cumin
- 1 1/2 tsp chili powder
- 1/2 tsp salt
- Orange wedges, to taste

- In a bowl, combine all of the ingredients except for the orange wedges. Cover and let marinate in the refrigerator for 30 minutes or up to 8 hours.
- Preheat the grill, setting the burners to high (see note). Oil the grate.
- Drain the chicken and set the marinade aside.
- Reduce the temperature of the barbecue to medium-low. Place the chicken on the grate. Using a pastry brush, cover the chicken with the reserved marinade. Close the lid and grill for 8 to 10 minutes on each side or until the chicken is cooked through. Season with salt and pepper.
- Transfer the chicken to a serving dish. Serve with orange wedges and our watermelon, lime and jalapeño salad, if desired.
