Grilled Chicken Wraps

- ¼ cup (60 ml) olive oil
- ¼ cup (60 ml) buttermilk
- 2 tbsp (30 ml) Dijon mustard
- 1 shallot, peeled and coarsely chopped
- 2 garlic cloves, peeled and coarsely chopped
- 2 sour gherkins, coarsely chopped
- ½ tsp salt
- 1 lb (450 g) boneless, skinless chicken breast, halved horizontally
- 3 cups (90 g) romaine lettuce, torn into small pieces
- 1 cup (120 g) carrots, cut into a fine julienne
- 2 Lebanese cucumbers, cut into thin ribbons
- 2 tbsp (30 ml) mayonnaise
- 2 tbsp freshly grated Parmesan cheese
- 1 tbsp dill, finely chopped
- 4 large wheat tortillas, around 9 inches (23 cm) in diameter

- In a blender, purée all of the ingredients, except the chicken, until smooth.
- In a bowl, combine the chicken with half of the mustard marinade. Cover and let marinate for 8 hours or overnight. Transfer the remaining marinade to an airtight container and refrigerate until ready to serve.
- Preheat the grill, setting the burners to high. Oil the grate.
- Drain the chicken. Grill on the barbecue for 8 minutes or until completely cooked through, turning over halfway through.
