Grilled Chicken Cutlets with Tomato Sauce and Melted Mozzarella

Preheat the grill, setting the burners to high. Oil the grate.

On a large plate, sprinkle the chicken with the ground fennel and red pepper flakes. Season with salt and pepper. Lightly oil the chicken.

Grill the chicken for 4 minutes on one side. Flip the meat over. Cover with the tomato sauce, cheese and olives. Grill for another 4 minutes or until the chicken is cooked through and the cheese is melted. Remove from the heat. Garnish with the basil.

Serve with buttered pasta or a green salad, if desired.
