Green Zucchini Relish

Instructions

    In a food processor, finely chop the zucchini and place in a large bowl. Finely chop the onions and bell pepper. Transfer to the same bowl.

    Add the coarse salt to the bowl of vegetables and mix well. Cover and refrigerate for 12 hours.

    Place the vegetables in a large fine-mesh sieve and rinse well under cold running water. Place the vegetables between two layers of cheesecloth and press firmly to extract as much water as possible.

    Transfer the vegetables to a pot. Add the remaining ingredients. Bring to a boil. Simmer over medium heat for 25 minutes, stirring a few times.

    Pour the relish into airtight containers or hot sterilized jars (see note). Let cool. Refrigerate. Delicious with burgers or hot dogs.
