  • 12 cups (3 litres) diced green tomatoes (purchase 2.3 kg / 5 lbs of tomatoes)
  • 2 McIntosh apples, peeled, seeded and diced
  • 6 cups (1.5 litres) sugar
  • 1/2 cup (125 ml) lemon juice

Инструкция

  1. In a heavy saucepan, combine all the ingredients. Bring to a gentle boil, stirring frequently. Attach a candy thermometer in the centre of the pan and simmer for about 1 hour and 15 minutes or until the thermometer reads 104 °C (219 °F). Skim carefully and stir frequently while cooking.
  2. Pour into sterilized jars. Freeze or sterilized according to the sterilization technique (see article Sterilization 101).
