In a large non-stick skillet over high heat, cook half of the green beans at a time in half (1 tbsp/15 ml) of the oil for 4 minutes or until al dente and nicely browned. Season lightly with salt and pepper. Set aside on a plate.

In the same skillet over medium-high heat, cook the pork, breaking it up with a wooden spoon, until starting to brown. Add the garlic, oyster sauce, brown sugar and ginger. Cook for another 5 minutes while stirring or until the pork is nicely browned. Season generously with pepper.

Add the green beans and soy sauce to the skillet. Continue to cook while stirring until the soy sauce has been absorbed. Adjust the seasoning.

Serve the stir-fry in bowls. Serve with rice and store-bought chili oil, if desired.
