Cut the zucchini in half lengthwise, then into of 1-cm (1/2-inch) pieces.

In a large skillet or wok, stir-fry all the ingredients together until the zucchini is tender but still crunchy. Season with salt and pepper.

Serve with the Herb-Crusted Pork Loin or the Grilled Salmon with Honey and Cilantro.
