  • 1 1/2 cups (375 ml) flour
  • 1 1/4 cups (310 ml) beer
  • 2 teaspoons (10 ml) olive oil
  • 2 egg whites
  • Salt and pepper
  • Canola oil
  • 12 zucchini blossoms 

  • fleur de sel

  1. In a bowl, combine the flour and beer with a whisk. Whisk in the oil and egg whites. Season with salt and pepper.
  2. Preheat the oil in the deep fryer to high temperature.
  3. Preheat the oven to 100 °C (200 °F). Line a baking sheet with paper towels.
  4. With a brush, coat each blossom with the batter. Fry four blossoms at a time for about 3 minutes or until nicely golden brown. Drain on the paper towel and keep warm in the oven. Sprinkle with fleur de sel before serving.
