  • The meat from 24 choice oysters
  • All-purpose flour 

  • 8 cups (2 litres) mixed greens
  • 1 cup (250 ml) all-purpose flour
  • 1/2 cup (125 ml) beer
  • 1 egg 

  • 1 tablespoon (15 ml) melted butter
  • Salt and pepper
  • 3 shallots, chopped 

  • 1/2 cup (125 ml) olive oil
  • 3 tablespoons (45 ml) red wine vinegar
  • 1 cup (250 ml) pineapple, cut into small dice
  • 1/2 red pepper, cut into small dice 

  • Salt and pepper
