Flaxseed Crêpes

    In a coffee or flaxseed grinder, grind the flax seeds.

    In a bowl, whisk together all of the ingredients, except for the flaxseed, until the mixture is smooth. Pass the batter through a sieve. Stir in the ground flaxseed. Let rest for 15 minutes.

    Preheat a non-stick skillet over medium heat. Brush with butter. Pour about 75 ml (1/3 cup) of batter for each pancake. Cook for 1 to 2 minutes per side or until golden brown. Keep warm.
