With the rack in the middle position, preheat the oven to 350°F (180°C). Line a 12-cup muffin tin with paper or silicone liners.

In a bowl, combine the cereal, milk and vanilla. Set aside.

In another bowl, combine the flour, cocoa powder, baking powder, baking soda and salt.

In a third bowl, whisk together the egg, brown sugar and oil. Add the cereal mixture and the dry ingredients. Using a spatula, mix just until the dry ingredients are moistened. Set a few pieces of chocolate aside to garnish the muffins. Stir the remaining chocolate into the bowl of batter. Divide the batter among the muffin cups. Top with the reserved chocolate.

Bake for 20 minutes or until a toothpick inserted in a muffin comes out clean. Let cool.
