Double Chocolate Waffles

    In a bowl, combine the flour, cocoa powder, baking soda and salt.

    In another bowl, whisk the eggs, brown sugar and vanilla with an electric mixer for 5 minutes or until pale, forms a ribbon and triples in volume. Gradually whisk in the oil. Using a spatula, fold in the dry ingredients and chocolate alternating with the buttermilk until everything is moistened (a few lumps of flour will remain). Let the batter rest for 10 minutes.

    Preheat a waffle iron. Pour about 1/3 cup (75 ml) of the batter into each cavity. Close the machine. Cook for 4 to 5 minutes or until the waffles are cooked through. Keep warm. Repeat with the remaining batter.

    Serve the waffles with vanilla yogurt and Black Cherry Compote, if desired.
