Using three quarter of the cream cheese, cover each bread slice.

Using a 5-cm (2-inch) plain round cookie cutter, cut out 32 bread circles, avoiding the crust. On 16 circles, place a slice of cucumber and top with the remaining circles, cream cheese side down.

Lightly cover the top of each sandwich with the remaining cream cheese and top with a second slice of cucumber.

Serve the sandwiches with Niçoise Soup.
