- ¼ cup (60 ml) low-sodium soy sauce
- ¼ cup (60 ml) vegetable oil
- 2 tbsp (30 ml) lime juice
- 1 tbsp brown sugar
- 4 Lebanese cucumbers, halved lengthwise, then cut into ¼-inch (5 mm) slices on an angle
- 1 romaine lettuce, torn
- ½ lb (225 g) green beans, trimmed and blanched
- ½ cup (75 g) roasted salted peanuts, chopped
- ½ cup (45 g) unsweetened or sweetened grated coconut, toasted
- ⅓ cup (50 g) roasted black and white sesame seeds
- ⅓ cup (20 g) store-bought fried onions (see note)

- In a large bowl, whisk together the soy sauce, oil, lime juice and brown sugar until the sugar has dissolved.
- Add the remaining ingredients to the bowl and mix well. Season with salt as needed. Transfer the salad to a large serving dish. Serve immediately.
