  • 12 lasagna noodles 

  • 2 1/2 cups (250 g) grated mozzarella cheese
  • 1 1/2 lb (675 g) lean ground pork
  • 1/3 cup (75 ml) olive oil
  • 5 cups (1.25 litres) butternut squash, peeled, seeded and cubed (1 medium squash)
  • 2 onions, thinly sliced
  • 1/2 cup (125 ml) chicken broth
  • 1/3 cup (75 g) butter
  • 1/2 cup (75 g) unbleached all-purpose flour
  • 2 cups (500 ml) chicken broth
  • 2 cups (500 ml) milk
  • 1 cup (70 g ml) Parmesan cheese, freshly grated
  • ¼ tsp ground nutmeg

  1. In a pot of salted boiling water, cook the pasta until al dente. Drain and rinse under cold water. Lightly oil the pasta. Set aside.
