In a small food processor, purée the ham, cream cheese and mayonnaise until smooth. Add the dill. Season generously with pepper and mix well. The spread will keep for 3 days in an airtight container in the refrigerator.

Top the crackers with mustard and the ham spread. Garnish with gherkin slices. Serve immediately.
