    With the rack in the middle position, preheat the oven to 275°F (135°C).

    In an 11 x 8-inch (28 x 20 cm) baking dish, combine all of the ingredients. Season generously with salt and pepper. Cover with foil. Bake for 1 hour or until the tomatoes have broken down slightly. Let cool for 30 minutes (see note). Remove and compost the thyme sprigs.
