Wash the citrus fruit. Using a vegetable peeler, remove the zest being careful to avoid the white pith. Using a paring knife, remove any white pith from the zest as needed.

In a mortar or a bowl, combine the strips of zest with the sugar. Using a pestle or your fingers, rub the zest with the sugar. Transfer the mixture into an airtight container. Seal the container and let sit for 3 hours or up to 24 hours at room temperature.

Add the juice to the container. Close the container and shake until the sugar has dissolved. Strain through a sieve and compost the zest. The syrup will keep for 1 month in the refrigerator.
