Coal-Roasted Potatoes

Prepare a wood fire and let it burn to get a bed of coals (see note) or preheat the grill, setting the burners to medium.

Wrap each potato tightly in two layers of aluminum foil (one layer only if they are baked on the grill).

Cook the potatoes in the coals or grill for 45 minutes to 1 hour or until soft. Serve with butter, sour cream, and chopped fresh chives.
