Remove the first layer of the onion skins. Halve the onions.

In a large pot over medium-high heat, brown the cut sides of the onions in the oil until caramelized. Add the remaining ingredients.

Bring to a boil and simmer for 45 minutes or until the vegetables are tender. Strain the broth and compost the vegetables. Let cool before refrigerating or freezing.
