Classic Salmon Tartare

- 2 tablespoons (30 ml) mayonnaise
- 2 tablespoons (30 ml) chopped fresh chives
- 1 tablespoon (15 ml) chopped capers
- 1 teaspoon (5 ml) Dijon or whole-grain mustard (or to taste)
- Juice of 1 lime
- Green or red Tabasco sauce, to taste
- 1/2 lb (225 g) skinless salmon fillet, very fresh, finely chopped with a knife
- Chopped fresh chives, for garnish
- Salt
- 1 cup (250 ml) canola oil, approximately
- 1/2 cup (125 ml) cornstarch
- 1 egg white, lightly beaten
- 3 nori sheets

- In a bowl, combine mayonnaise, chives, capers, mustard, lime juice and Tabasco sauce. Add salmon. Mix thoroughly. Season with salt. Cover and refrigerate until ready to serve. Place on seaweed chips, if desired.
