This gorgeous chocolate cake filled with passion fruit cream and topped with a silky ganache is the perfect dessert for Valentine’s Day.

- 1/2 cup (75 g) unbleached all-purpose flour
- 3 tbsp cocoa powder, sifted
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1 egg
- 1/2 cup (105 g) sugar
- 2 tbsp (30 ml) canola oil
- 1/2 tsp (2.5 ml) vanilla
- 1/3 cup (75 ml) buttermilk
- 2 passion fruits, halved (see note)
- 1 tsp powdered gelatin
- 2 egg yolks
- 3 tbsp sugar
- 1/2 cup (125 ml) warm milk
- 3 oz (85 g) dark chocolate, chopped
- 6 tbsp (90 ml) 35% cream
- 2 tbsp unsalted butter, softened
- 1 tbsp (15 ml) passion fruit syrup (see note)
- 2 tbsp (30 ml) passion fruit syrup
- 1 oz (30 g) white chocolate, melted and cooled

- With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a 6-inch (15 cm) springform pan with removable bottom. Line the bottom of the pan with parchment paper.
- In a bowl, combine the flour, cocoa powder, baking soda and baking powder.
- In another bowl, whisk together the egg, sugar, oil and vanilla. Add the dry ingredients alternating with the buttermilk. Mix until smooth. Pour into the prepared pan.
- Bake for 35 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool on a wire rack before unmoulding.
