  • 1/2 cup (75 g) unbleached all-purpose flour
  • 3 tbsp cocoa powder, sifted
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1 egg
  • 1/2 cup (105 g) sugar
  • 2 tbsp (30 ml) canola oil
  • 1/2 tsp (2.5 ml) vanilla
  • 1/3 cup (75 ml) buttermilk
  • 2 passion fruits, halved (see note)
  • 1 tsp powdered gelatin
  • 2 egg yolks
  • 3 tbsp sugar
  • 1/2 cup (125 ml) warm milk
  • 3 oz (85 g) dark chocolate, chopped
  • 6 tbsp (90 ml) 35% cream
  • 2 tbsp unsalted butter, softened
  • 1 tbsp (15 ml) passion fruit syrup (see note)
  • 2 tbsp (30 ml) passion fruit syrup
  • 1 oz (30 g) white chocolate, melted and cooled

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a 6-inch (15 cm) springform pan with removable bottom. Line the bottom of the pan with parchment paper.
  2. In a bowl, combine the flour, cocoa powder, baking soda and baking powder.
  3. In another bowl, whisk together the egg, sugar, oil and vanilla. Add the dry ingredients alternating with the buttermilk. Mix until smooth. Pour into the prepared pan.
  4. Bake for 35 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool on a wire rack before unmoulding.
