Chocolate Mousse

    In a bowl placed over a saucepan of simmering water, melt the chocolate with the butter while stirring. Remove from the heat. Whisk in the egg yolks, whisking until the mixture is smooth.

    In a bowl, whip the egg whites and the sugar with an electric mixture until stiff peaks form. Using a spatula, gently fold in the chocolate mixture.

    In another bowl, whip the cream and vanilla with an electric mixer until stiff peaks form. Using a spatula, gently fold the whipped cream into the chocolate mixture. Spoon the mousse into dessert cups. Garnish with chocolate shavings. The mousse will keep for 3 days in the refrigerator. Bring to room temperature before serving.
