Chocolate Hazelnut Madeleines

    With the rack in the middle position, preheat the oven to 400°F (200°C). Generously butter two 12-cavity madeleine moulds.

    In a bowl set over a pot of boiling water or in the microwave oven, melt the chocolate with the butter. Let cool.

    Meanwhile, in another bowl, combine the flour, baking powder and salt.

    In a third bowl, whisk the eggs and sugar for 2 minutes with an electric mixer. Add the chocolate mixture. Stir in the flour mixture until combined.

    Fill each cavity three-quarters full with batter. Bake for 8 minutes or until puffed up. Unmould onto a wire rack and let cool completely, about 1 hour.
