Chicken tikka is a star dish in India. Here we appreciate it all the more when we can make it easily at home. This delicious chicken is marinated in plain 11% yogurt and spices—just enough to give it a good coating and rich taste. Part of the marinade is also used to prepare a hot sauce, flavoured with typical Indian spice blends, like garam masala, with tomato and spinach. It’s a very cozy dish that will warm you up instantly.

- 2 tbsp fresh ginger, finely grated
- 4 garlic cloves, finely grated
- 1 tbsp garam masala
- 1 tbsp sweet paprika
- 1 tsp ground cumin
- ½ tsp turmeric
- ¼ tsp cayenne pepper
- 1 ½ tsp salt
- 1 tsp (5 ml) vegetable oil
- ¾ cup (180 ml) 11% plain yogurt
- 2 lb (900 g) boneless, skinless chicken thighs, each cut into 3 pieces
- 2 onions, thinly sliced
- 3 tbsp butter
- 1 can (14 oz/398 ml) diced tomatoes
- 1 cup (250 ml) water
- 1 cup (250 ml) 11% plain yogurt
- 6 cups (140 g) baby spinach
- Cilantro leaves, for serving

- In a small bowl, combine the ginger, garlic, spices and salt and oil. Season generously with pepper.
- In another bowl, combine the yogurt with half of the ginger mixture. Add the chicken and toss to coat well with the marinade. Cover and let marinate in the refrigerator for 4 to 8 hours. Cover the remaining ginger mixture and refrigerate it, reserving it for the sauce.
