Ингредиенты

  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (10 g) chopped flat-leaf parsley
  • 2 tsp (10 ml) coarsely chopped capers
  • 2 cups (340 g) diced poached or roasted chicken
  • 3 tbsp (45 ml) lemon juice
  • 2 tbsp chopped fresh basil
  • Salt and pepper
  • 1/2 lb (225 g) fresh mozzarella cheese, cut into wedges (or burrata cheese)
  • 3 roasted bell peppers, cut into strips
  • 2 tomatoes, cut into wedges
  • Olives
  • Crackers

  1. In a small saucepan over medium heat, soften the onion and garlic in the oil until lightly browned. Add the parsley and capers. Continue cooking for 1 minute. Let cool.
  2. In a bowl, combine the chicken, onion mixture, lemon juice and basil. Add olive oil, if needed, until the salad is rich and moist. Season with salt and pepper.
