Ingredients

½ tsp coriander seeds  
½ tsp mustard seeds  
½ tsp cumin seeds  
½ tsp aniseeds
1 chicken, about 4 lb (1.8 kg), skin removed and cut into 8 pieces
3 tbsp (45 ml) olive oil  
1 red onion, thinly sliced  
6 cloves garlic, peeled and halved  
1 tsp crushed red pepper flakes (or to taste)
1 tsp chopped chili pepper (or to taste)  
2 tbsp ground Colombo powder (see note)  
3 Yukon Gold potatoes, peeled and cut into quarters  
1 sweet potato, peeled and cubed  
1 zucchini, cubed  
2 green onions, chopped  
1 can (14 oz/398 ml) coconut milk  
Juice of 1 lime
Salt and pepper
