In a pot off the heat, whisk together the sugar, water and cornstarch. Add the cherries. Cook over medium heat, stirring with a wooden spoon, until simmering. Cook for 1 minute longer. Pour into a bowl and let cool.

Delicious spread on toast or spooned over Double Chocolate Waffles. The cherry compote will keep for 1 week in an airtight container in the refrigerator.
