With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the sides of an 8-inch (20 cm) springform pan and line the bottom with parchment paper.

In a bowl, combine the flour, baking soda, baking powder, salt and tea.

In another bowl, whisk the brown sugar, oil and vanilla with an electric mixer. Add the eggs one at a time and mix until smooth. With the machine running on low speed, add the yogurt and dry ingredients. Mix until smooth. Using a spatula, fold in the grated apples. Spread the batter out in the prepared pan.

Bake for 1 hour or until a toothpick inserted in the centre of the cake comes out clean. Let cool completely on a wire rack, about 3 hours, before unmoulding.
