  • ½ cup (125 ml) water
  • ½ cup (115 g) unsalted butter, diced
  • 2 tsp sugar
  • ½ tsp salt
  • 1 cup (150 g) unbleached all-purpose flour
  • 4 eggs
  • 2 cups (500 ml) 35% whipping cream
  • ¾ cup (180 ml) dulce de leche
  • ¼ tsp salt
  • ¾ cup (180 ml) apple jelly
  • 1 cup (210 g) sugar
  • ¼ cup (60 ml) clear corn syrup
  • ¼ cup (60 ml) water
  • 24 wooden sticks (optional)

Инструкция

  1. In a bowl, cream the butter, brown sugar and food colouring with an electric mixer. With the machine running on low speed, add the flour and salt.
  2. Using a rolling pin, roll the mixture out between two sheets of parchment paper until 1/8 inch (3 mm) thick. Refrigerate for 30 minutes.
  3. Using a 1 ½-inch (4 cm) round cookie cutter, cut out 24 circles of craquelin. Repeat with the scraps as needed. Spread the craquelin out on a baking sheet lined with parchment paper. Refrigerate.
