Candy Apple Cream Puffs

- 3 tbsp brown sugar
- 1/8 tsp (0.5 ml) red food colouring gel
- ⅓ cup (50 g) unbleached all-purpose flour
- ½ tsp salt
- ½ cup (125 ml) milk
- ½ cup (125 ml) water
- ½ cup (115 g) unsalted butter, diced
- 2 tsp sugar
- ½ tsp salt
- 1 cup (150 g) unbleached all-purpose flour
- 4 eggs
- 2 cups (500 ml) 35% whipping cream
- ¾ cup (180 ml) dulce de leche
- ¼ tsp salt
- ¾ cup (180 ml) apple jelly
- 1 cup (210 g) sugar
- ¼ cup (60 ml) clear corn syrup
- ¼ cup (60 ml) water
- 24 wooden sticks (optional)
Инструкция
- In a bowl, cream the butter, brown sugar and food colouring with an electric mixer. With the machine running on low speed, add the flour and salt.
- Using a rolling pin, roll the mixture out between two sheets of parchment paper until 1/8 inch (3 mm) thick. Refrigerate for 30 minutes.
- Using a 1 ½-inch (4 cm) round cookie cutter, cut out 24 circles of craquelin. Repeat with the scraps as needed. Spread the craquelin out on a baking sheet lined with parchment paper. Refrigerate.
