Caesar-Style Beef Tartare

- 1 egg yolk
- 1/2 lemon, zest finely grated, and juiced
- 2 tbsp (30 ml) Dijon mustard
- 1 tbsp (15 ml) Worcestershire sauce
- 1 drizzle Tabasco sauce, to taste
- 3/4 cup (180 ml) vegetable oil
- 1/4 cup (20 g) Parmesan cheese, freshly grated
- 1 tsp (5 ml) anchovy paste
- 1 small garlic clove, chopped
- 1/4 cup (40 g) drained capers
- Canola oil, for frying
- 1 1/2 lb (675 g) flap steak
- 1/4 cup (35 g) cooked bacon, crumbled
- 2 tbsp shallots, chopped
- 2 tbsp fresh chives, finely chopped
- 1 romaine lettuce, quartered lengthwise
- Croutons (homemade or store-bought), to taste
- Parmesan shavings, to taste

- In a bowl, whisk together the egg yolk, lemon zest and juice, mustard, Worcestershire and Tabasco sauces. Slowly drizzle in about a third of the oil, drop by drop, whisking constantly. When the emulsion starts to resemble mayonnaise, drizzle in the remaining oil while whisking. Add the Parmesan, anchovy paste and garlic. Season with salt and pepper.
