1/4 cup (60 ml) lime juice
1/4 cup (60 ml) olive oil
1/4 cup (60 ml) fresh coriander, finely chopped
2 green onions, finely sliced
1/2 jalapeño, seeded and finely chopped
1 clove garlic, finely chopped
1 tablespoon (15 ml) honey
Salt and pepper
12 cups (3 litres) arugula
2 tomatoes, seeded and cut into 16 wedges
1 mango, peeled and thinly sliced
