  • 1 cup (150 g) unbleached all-purpose flour
  • ¼ tsp salt
  • ½ cup (115 g) unsalted butter, softened
  • ¼ cup (40 g) maple sugar
  • 1 egg yolk
  • ½ cup (80 g) maple sugar
  • ¼ cup (35 g) cornstarch
  • 4 egg yolks
  • 2 cups (500 ml) milk
  • ½ cup (125 ml) unsweetened applesauce
  • 3 Cortland apples, seeded and very thinly sliced into half-moons
  • 3 tbsp (45 ml) apple jelly

Инструкция

  1. In a bowl, combine the flour and salt.
  2. In another bowl, cream the butter and maple sugar with an electric mixer. Add the egg yolk and whisk until smooth. With the machine running on low speed, add the dry ingredients.
  3. Press the dough evenly along the bottom and up the sides of a 9-inch (23 cm) round, 1-inch (2.5 cm) tall, fluted tart pan with removable bottom. Prick the dough with a fork. Refrigerate for 30 minutes.
  4. With the rack in the middle position, preheat the oven to 400°F (200 °C).
  5. Bake the crust for 15 minutes or until cooked through and golden. Let cool.
