Brownies are the best kind of indulgence. Cook them in ramekins in the air fryer. Put a dollop of dulce de leche in the centre of the dough to create a molten heart. Once cooked, simply remove the brownies from the ramekins for individual desserts.

- 4 oz (115 g) 70% dark chocolate, coarsely chopped
- 1/2 cup (115 g) unsalted butter, cubed
- 2 eggs
- 1/2 cup (105 g) sugar
- 1/4 cup (40 g) unbleached all-purpose flour
- 1 pinch salt
- 1/4 cup (60 ml) dulce de leche

- Butter and flour four ¾-cup (180 ml) ramekins.
- In a bowl placed over a pot of simmering water or in the microwave oven, melt the chocolate with the butter. Let cool.
- In another bowl, whisk together the eggs and sugar until smooth. Add the chocolate mixture and mix well. Stir in the flour and salt. Mix until smooth.
- Divide half of the brownie mixture among the ramekins. Place 1 tbsp (15 ml) of the dulce de leche at the centre of each ramekin. Top with the remaining brownie mixture.
- Place the ramekins in the basket of an air fryer. Cook for 12 minutes at 350°F (180°C) or until the tops of the brownies are cooked and slightly darkened (see note). Remove the ramekins from the basket. Let the brownies rest for 5 minutes or let cool.
- Run a thin blade between the side of the ramekins and the brownies. Unmould the brownies while still warm by turning them over onto plates.
