Panzanella

Ingredients

  • 3 cups (150 g) slightly stale country bread, cubed
  • 3 tomatoes, sliced into thin wedges
  • 2 green onions, thinly sliced diagonally
  • 1 celery stalk, diced small
  • 1/4 (10 g) celery leaves, coarsely chopped
  • 2 tbsp fresh basil, finely chopped
  • 1 tsp fresh oregano leaves, finely chopped
  • 2 tbsp pine nuts (optional)
  • 2 tbsp (30 ml) red wine vinegar
  • 3 tbsp (45 ml) olive oil

Instructions

  1. In a bowl, cover the bread with cold water and let soak for 2 minutes. Gently squeeze the bread with your hands and transfer to a large bowl or salad bowl.
  2. Add the remaining ingredients and mix to combine. Season with salt and pepper.
