Lemon and Garlic Shrimp Skewers

Ingredients
- 2.2 lb (1 kg) large shrimp, shelled with tails intact
- 3 tbsp (45 ml) olive oil
- 2 garlic cloves, thinly sliced
- 2 lemons, zest finely grated
- 1 lemon, juiced
- 1 pinch cayenne pepper
- Lemon wedges, for serving
Instructions
- In a bowl, combine the shrimp, oil, garlic, lemon zest and juice, and cayenne. Thread the shrimp onto skewers (if wooden, soak in water for 30 minutes before using). Place on a large plate. Cover and refrigerate for 10 minutes or for up to an hour.
- Preheat the grill or a non-stick grill pan, setting the burners to high. Oil the grate or the pan.
- Season the shrimp skewers with salt and pepper. Grill for 1 to 2 minutes on each side or until the shrimp are cooked through. Serve with lemon wedges.
