Silken Tofu Soup

For an uncomplicated vegetarian starter, start with a soup made with vegetable broth, add Asian sauces, ginger and green onion, followed by cubes of silken tofu and edamame. Bonus? This comforting soup comes together in less than 30 minutes.

Ingredients

  • 1 green onion, thinly sliced, white and green parts separated
  • 2 tsp fresh ginger, chopped
  • 1 tbsp (15 ml) vegetable oil
  • 4 cups (1 litre) vegetable broth
  • 3 tbsp (45 ml) low-sodium soy sauce
  • 1 tbsp (15 ml) mirin
  • 1 tbsp (15 ml) toasted sesame oil
  • 1 cup (145 g) frozen shelled edamame
  • 1 block (300 g) silken tofu, diced or cubed

Instructions

  1. In a pot over medium heat, soften the white parts of the green onion and the ginger in the vegetable oil. Add the broth, soy sauce, mirin and sesame oil. Bring to a boil. Add the edamame and continue to cook for 3 minutes.
  2. Divide the tofu among four bowls. Pour the hot broth over the tofu. Garnish with the green parts of the green onion.
