Stir-Fried Pork with Pineapple Juice
Ingredients
- 1/2 cup (125 ml) pineapple juice
- 1/4 cup (60 ml) rice vinegar
- 1/4 cup (60 ml) hoisin sauce
- 2 tablespoons (30 ml) peanut oil
- 1 pork tenderloin (454 g/1 lb), cut into thin strips
- 2 star anise pods
- 1 tablespoon (15 ml) finely chopped fresh ginger
- 2 cloves garlic, finely chopped
- 3 cups (750 ml) snow peas, trimmed
- 1 red or orange bell pepper, cut into thin strips
- 1 cup (250 ml) pineapple cut into sticks
Instructions
- In a bowl, combine all the ingredients. Set aside.
