Slow-Cooker Broufado (Provençale Braised Beef with Onions)
Ingredients
- 2 large Spanish onions, thinly sliced
- 60 ml (¼ cup) olive oil
- 60 ml (¼ cup) chopped parsley
- 5 ml (1 tsp) capers, drained and chopped
- 8 fillets anchovy, chopped
- 1 bay leaf
- 2 cloves
- 1.5 kg (3 lb) boneless beef blade, cut into 2.5 cm (1-inch) cubes
- Salt and pepper
Instructions
- In a bowl, combine the onions, oil, parsley, capers, anchovies, bay leaf and cloves. Season with salt and pepper.
- In the cavity of a slow cooker, spread a third of the onion mixture. Layer with half of the meat. Cover with another third of the onions and the remaining meat. Finish with the remaining onions.
- Cover and cook on Low for 8 hours. Serve with mashed potatoes and a green vegetable.
