Sausage and Arugula Salad
Ingredients
- 4 Italian sausages, spicy or mild
- 5 oz (142 g) arugula (1.5 litres/6 cups)
- 1 avocado, diced
- 2 green onions, chopped
- 2 tablespoons (30 ml) olive oil
- ½ lemon, the juice only
- 1/4 cup (60 ml) unsalted roasted peanuts, crushed
- 4 fresh apricots, pitted and quartered or 8 dried apricots, finely chopped
- 1/4 cup (60 ml) grated Parmigiano-Reggiano cheese
- Salt and pepper
Instructions
- Preheat the grill, setting burners to medium. Oil grate.
- Grill sausages until cooked through. Let cool. Cut into slices.
- In a large bowl, toss arugula, avocado, green onions, oil and lemon juice. Season with salt and pepper.
- Serve garnished with sausage. Sprinkle with peanuts, apricots and cheese.
